Wondering if any of you know if there is a school or a luthier in Montreal that takes on students (acoustic builds)? I have a friend in Montreal who is thinking about diving in to this habitual hobby.

Sergei DeJonge I think in Ottawa. I personally like his daughter's guitars better than his, but I imagine his classes are great. I was considering doing his course after about a year of building, and I think at the time it was around $5000US including room/board. This was several years back though. Worth checking out! And like I said, Shia's guitars are wonderful, and get better each time I see a new one - and they're reasonably priced (for hand-built concert classical guitars at least)
